Eating Clean Italian Egg Sandwich
1 whole egg 2 egg whites 1/4 cups peeled and diced potatoes 1 1/2 teaspoons olive oil, divided 1 tablespoon wtare 1/2 red pepper, seeded and diced 1/2 onion, diced 2 cloves minced garlic 1 teaspoon finely chopped fresh basil 1 1/2 teaspoons goat cheese 2 whole wheat Italian rolls 1/2 cup fresh spinach 1 small tomato, sliced
Beat eggs and egg whites together in a small bowl.
Heat a saute pan to medium high heat. Spray with olive oil and add potatoes and water. Cook for three minutes. Add onion and red pepper. Cook for 10 minutes, or until soft. Add garlic and cook for ten more minutes. Pour in eggs. Stir and flip. Cook until done
Meanwhile, in a small bowl combine basil, cheese, black pepper and oil. Spread cheese mixture in the top half of each roll. Put half of egg mixture on a roll and top with spinach and tomato.
